A supreme quality fleshing knife by Minnesota Brand Products. An Austrian forged fleshing knife and the steel is the best.
"The MB - Cutting Edge" Fleshing Knife has a blade length of 18 3/8" and an overall length of 27 3/8" including the oak handles. Despite the quality of the steel and the oak handles, the knife weighs in at just under two pounds which is considerably less then most knives of comparable size. While some "pros" use a razor edge on the entire animal, others put a razor edge on 1/3 of the blade which they use for "shaving" the neck area and dull the blade on the other 2/3 for "pushing." Still others use "the Cutting Edge" for the tough areas and use a knife of lesser quality for the easier "push areas." Only personal experience will dictate which method works best for you.
